I found this recipe in my mom’s copy of Practical Paleo – and followed it with one teensy exception: I subbed doTERRA lemon oil for the zest. Also: I tripled the recipe, and I’m SO glad I did. I shared a dozen with my dad and we had enough muffins to last for a whole week of breakfasts… Which made every single morning easier!
